Scope: This ICC Standard describes the determination of the acidity of wheat, rye barley, and rice, and their milling products by the method of Schulerud.
Principle: Grinding of the product, if necessary, extraction by means of 57 % (m/m) ethanol, centrifugation of the extract, and titration with standard alkali.

Definition

1 acidity unit corresponds to 0.01 gram-equivalent of acid per kg of product, extracted under specified conditions.
