Scope: The method was developed for wheat, rye, triticale, oats, barley and corn and is applicable for products out of the cereals. The advantage using an oxygen electrode is that no clear extracts are needed.

Definitions

Catalase (EC 1.11.1.6) is a heat sensitive enzyme that indicates minimum heat treatment. By action of catalase oxygen is released from hydrogen peroxide, the increase in oxygen is measured by an oxygen electrode.
